Hello from the Caviste:

Welcome to June and the forecast of long days, afternoon naps, and swimsuits. We have delightful surprises for you this month. We hope to see you this month before our annual summer break.

HOLIDAY CLOSURE IS JULY 1-15.


We have our upcoming Tuesday tasting June 4, with Piedmont Wine Imports' Summer faves with a twist (unexpected sparklies and grapes that are some of our favorites for the summer).

There is our annual-ish Fête du Rosé on Wednesday, June 12, where we will pour at least 6 (maybe 7) very different rosés while you enjoy a buffet-style dinner from Chef John Bobby and his kitchen crew.

Lastly, we wanted to highlight our monthly wine clubs, where we hand-select either a grower champagne, a benchmark red, or a trio of value wines.

Tuesday Tasting

Summer Faves with a Twist
with Anna from Piedmont

What we'll be tasting:

Cantina Morone | Falanghina Col Fondo | 100% Falanghina | IT
Viticulture: Certified Organic
Soil type: Terra Bianca limestone-rich clay soils
Elevation: 250m
Method of fermentation: Harvested by hand in the cool early morning followed by a soft pressing. Secondary Fermentation in bottle. Unfiltered.
 Colloquially known as "Col Fondo," this is a style which literally translates in Italian to “with the bottom,” meaning that sediment or lees are present.


Bott Frères | Crémant Rosé d'Alsace | 100% Pinot Noir | FR
Viticulture: Certified Organic
Soil type: Composed of sandy-clayey loams, silty-clayey-sandy limestones and orange-yellow beige limestone pebbles which rest on a deep slab made up of limestone and sandstone marl. Soils marked by iron.
Method of fermentation: After a first fermentation in a thermoregulated stainless steel vat, the wine is bottled in February, so that the secondary fermentation in the bottle can take place. After a 12-month aging period, the bottles are turned at an angle so that the deposit settles in the neck of the bottle, and can be easily expelled during the disgorging stage. During disgorging, a small amount of dosage is added.


Centorame | Cerasuolo d’Abruzzo | 100% Montepulciano | IT
Viticulture: Certified organic / no sulfur added
Soil type: Clay-limestone
Elevation: 260m
Method of fermentation: Temperature-controlled stainless steel soft crushed and macerated on the skins for 16 hours
  This rosato is 100% Montepulciano from a four hectare parcel of cordone speronato vines, planted at a density of 5,000 plants per hectare. Centorame harvests very late in the season by regional standards. Hand-harvested, 100% destemmed, the contact to skin is limited to under a day and fermented in stainless-steel tanks and released the spring after harvest.

Visintini | Schioppottino | 100% Schioppottino | IT
Viticulture: Organic / Biodynamic
Soil type: Marl and Clay
Elevation: 200m
A family run winery with a history dating back to the middle ages, Visinitini is located in the hills behind Corno di Rosazzo. The grape is Schioppettino - a difficult grape that was nearly lost to extinction in the late 19th century when growers began replacing this grape with more widely known (and lucrative) varietals such as Cabernet Sauvignon. Today, the Visintini family only bottles this wine once every decade or so due to its challenging nature.

Goulard - Sereine

Region: France - Champagne
Montagne de Reims - Massif de St Thierry
Grapes: 35% Pinot Noir, 30% Chardonnay, 35% Pinot Meunier

Estate: Just outside of Reims, lies the small farming village of Prouilly. Four generations of the​ Goulard family have worked here, first managing a polyculture that included potatoes and asparagus,​ but now focused on tending grapes. The Goulards have 18.5 acres of vines spread over some 50 small parcels, all in the sub-region known as the Massif de Saint-Thierry - a high elevation site to the north​ and west of Reims. It's technically part of the Montagne de Reims, but​ is truly a terroir all its own. Viticulture on the Massif dates to the year 532, but the region has historically had a dearth of quality-​ oriented producers, till now. The small Goulard estate is a true embodiment of a “grower champagne” estate - family run and​ personal with a small production of around 5,000 to 6,000 cases. The soils and exposition here lend​ themselves to red grapes, so they dominate the estate’s various offerings. Damien Goulard resembles​ his grandfather in his dedication to farming and tending the land, considering the vineyard his garden.​ Tending each acre organically, the quality of his work was recognized by acceptance to the prestigious​ “Special Club”

Wine: Grapes at the estate are hand-harvested and crushed in a traditional 4000 kg Coquard vertical​ wooden basket press. The 4000kg can yield 2,500 liters, 2000 in the first pressing for the delicate​ flavors, 500 liters of the second pressing bring forth fuller fruit notes; everything after that is sent​ to the distiller. The red grapes are separated by village while the small amount of Chardonnay is​ blended together. The juice is fermented in stainless steel and malolactic fermentation is encouraged.​ 100% from 2013 and 2014 vintages with 10% of the wine matured in oak barrels. Aged for 40 months.​ This cuvée typifies Damien’s desire to capture the terroir of the south facing plots of St Thierry. The​ blend evokes raspberry jam, white flowers and candied orange. The initial taste is delicate and tasty​ and develops into a round, pulpy flesh of peach. It is supported by a well integrated acidity coming​ from the sandy-clayey soils. This wine sets a fine standard for this newly developing region in​ Champagne. $57
