Chef John Bobby and his kitchen are excited to serve you fun snacks, with a rotating menu of fresh raw oysters (pictured) and specials (such as house-made tagliatelle and pork rinds). We will, of course, offer the best wines to pair with these snacks. While we try to keep you posted on menu updates, the best way to stay informed on-the-go will be through our instagram posts, our handle @thecavistews.

Our pairings now are a Zweigelt rosé with pork rinds (accompanied with a gribiche sauce), or Muscadet sur Lie with fresh raw oysters. Test them for yourself.

Annesanti - Raspato

Pet-nat party in a bottle

 
We are delighted to welcome this fun biodynamic party in a bottle back on our shelves. This is a pet-nat rosé, made from Sangiovese and Alieatico grown on a polycultural farm in Umbria. Pet-nat is shorthand for petillant naturel, or the ancestral method of making sparkling wines. Pet-nats allow the bubbles to naturally form within the bottle by leaving the active yeast in the wine, thus the slight sediment in the bottle. Generally lower in alcohol and softer bubbles, these are delicious picnic or afternoon party wines, great with our bar snacks (especially the cheese or charcuterie plate) or to have as an aperitif before dinner. Salted cranberries, strawberry musk, mountain red berry notes, and delicate soft bubbles. Wonderfully refreshing with the berry fruit notes, but also slightly savory. Start the new year with this adventuresome bottle and a slice of your favorite pizza. $26/per.

Classic White Burgundy

 
 

This wine itself is an ever rarer find - value white burgundy.  Perfect for summer sipping when chilled and spring/sunny day sipping when closer to room temperature.  It is one of the easiest-drinking and best selling white burgundies we stock. Fresh, aperitif-y, light-footed, sprightly, full of stone fruit notes and eminently quaffable. From 50-60 year old vines there is a ripeness and intensity similar to more expensive wines from St. Aubin or Pouilly-Fuissé. It is great with a goat cheese salad, white fish or a classic roast chicken with a side of gratin dauphinois. $27/per.

Sparkling Chablis

 

 

From one of Chablis' most sought after young producers comes this  sparkling wine. Patrick honed his skills at some of burgundy's top houses; Leflaive, Jean-Marc Brocard, and Jean-Marie Guffens before embarking on his own in 2008. He is a maverick of sorts -- while over 90% of Chablis grapes are machine-harvested, Patrick hand harvests to pick the choicest fruits. This care and attention extends in the cellar and leads to this non-dosage sparkling wine.  Loaded with chalky minerality, savory kumquat and apricot compote, with elegant bubbles, this sparkly is a delicious winter bubbly to enjoy this season. $27/per.
