Hello from the Caviste;
Thanks for being part of The Caviste community in Winston-Salem. We are shifting our newsletter format hopefully to make it easier to read. We have also started to build out an online presence at www.thecavistews.com. This is a great place to look at some of the wines we have as well as our upcoming events.
The weather is gorgeous right now and the temperatures have cooled. As the leaves begin to change, so do the wines on the shelves of the stores. We always hope to have your favorites, but also look out for new or returning wines well suited to the cooler weather and changing menus of Fall. We present two favorites below.

Faury - Collines Rhodaniennes

This time of the year, when the weather is still cold, the palate starts to look for red wines. One of my favorites is Syrah. Syrah produces a range of wines but all tend to have rich, dried fruit notes, a little smokey note and a nice hint of pepper on the finish.
It may be surprising that the delicate Faury wines are made by a man that resembles a Viking, as Lionel Faury does. But that is the case at this domaine. There’s a real attention to detail here, and nothing is done in haste. Every method used encourages the grape towards greatness with the ultimate respect for its fragility. Pigeage, the punching of the cap, is not carried out with tools, but gently by foot— not just poetic, but also pragmatic. Unlike many other vignerons in the region, the Faury's have a strong aversion to new oak. While all the wines are wood-aged, new barrels are kept to a minimum, and Lionel opts for larger formats better suited to his wines, mainly demi-muids and foudres.
The Northern Rhone has more expensive bottles from Cote Rotie and Cornas, but this regional bottling offers much of the enticement of those wines at an entry level price. Give the bottle a few minutes of air time and it shows a wonderful mix of aromas and flavors. Dried blackberries, baked plums and cassis are over layed with hints of tobacco, smoke, cocoa,and hints of coffee and crushed pepper. Lamb chops or a stew are perfect for this wine. Or, for a southern twist, a little smoke-kissed BBQ. $26 a bottle. |

Want a white wine for cooler weather - how about trying an "Orange" wine? No, these are not made from oranges but regular white grapes with a slightly different production process. A longer skin contact, more exposure to air and various containers are cause for the change in color but also result in a wine that is somewhere between a white (crisp and clean) and a red (more tannin and mouthfeel). All of that said, they are delicious, broadly food friendly and a welcome part of the broad world of wine.
From the small municipality of La Seca in Rueda, Manuel Cantalapiedra produces a range of wines using all organic and frequently biodynamic practices. Rueda is the ancestral home of Verdejo and its most exciting examples come from here. The vines here are 30 years old and grow in a sandy and pebbly soil. The juice is left on the skins for 6 hours and takes on a wonderfully hazy golden hay color. Crushed citrus and quince offer a refreshing midpalate with a soft kiss of tannins, perfect for some citrus baked chicken with a few herbs. $28
